Been a busy bee this morning, been up since 7 cooking. Have made



-Herby mince beef and vegetable couscous

-Red pepper, chickpea and feta pilaf

-Herbed shepards pie with rustic fennel mash on top plus some spare mash to go with a read roast we have in the freezer



All to go in freezer for easy meals this week



Plus ive made two weeks of purees for awen and prepared tonights 5 spice sticky gammon and noodles. Been a bloody orrible morning frankly as also had girls all morning while neils on overtime so been hopping back and forth all morning and the dishwashers probably lit up the national grid but at least am sorted for the next week or two. All ready to lose some weight!

Can I have the recipe for the herby beef mince and couscous please. it sounds like something i would eat.

I have just been looking at recipes on the slimming world website and thought i might try making the burgers over the weekend and possibly one of the chicken ones. I need to find some that are freezable that i can use on weekdays when i am working.

Of course hang on:



200g couscous

300ml veg stock

Low cal cook spray egfry light

250g extra lean mince beef

1 red pepper deseeded and finely chopped

1 carrot peeled and finely diced

100g green beans cut into 1.5cm lengths

1tsp ground cumin

1 tsp curry powder

salt and pepper

2tbsp each finely chopped fresh mint and coriander

1 finely chopped tomato

4tbsp fat free natural yoghurt to serve



put couscous in wide heat resistant bowl and add stock, cover with cling film and leave 10-12 mins



spray non stick frying pan with frylight and turn heat up high, add mince and veg and stir fry for 8-10 mins til sealed and cooked through



add cumin and curry powder and stir fry for 2 mins.



fluff up cous cous with a fork and add beef, chopped hebs and tomatoes then mix well, serve immediately with spoon ful fat free yoghurt



serves 4 and for those on SW is free on extra easy, 4 syns n green and 9 on original per serving

it does sound gorg. i'm glad i asked now. i'm a very fussy eater and dont eat a lot of things that most people do. and if a combination sounds strange i cant eat it either
