Oh I love b&b pud. This is how I make it, its probably wrong but it always tastes good!

I get a pint of blue milk, a small carton of double cream, pour in to a mixing bowl, add 4 large eggs, some vanilla (I use paste but I'm sure essence would be fine). Mix with a fork until the egg mixes in. Butter your bread on both sides, really generously! Grease your dish and put a bottom layer of bread, grate some nutmeg over, sprinkle some cinamon and sugar over and a hand full of rasins aand pour some of the egg mix on just enough to cover the bread, then do the same again until you fill the dish, add a good sprinkling of brown sugar and cinamon on top.
PUt it in the fridge for about an hour so the bread soaks up the mix, then cool in the oven for about 35-45mins on about 190, sorry I don't know the gas mark.

I like to put apricot Jam in between the slices of bread which is nice!

This is one of my most complemented dishes when I make it.

Grease a pie dish with butter

Butter a loaf of bread and take the crusts off, then cut into half in triangles and cover the bottom of a dish with a layer of bread, butter side up, I then sprinkle sultanas over, dark muscovado sugar, a little cinnamon and a little nutmeg, repeat this two more times so you have 3 layers.

Warm 350ml of whole milk and 50ml of cream gently in a saucepan, taking care not to boil

Meanwhile crack two large eggs into a bowl and whisk with 20g of granulated sugar until pale, add in the milk and cream mixture and mix well, then strain into a bowl, pour the custard mix over the bread until completely covered.

Sprinkle the top with a little nutmeg, approx 1 tsp of sugar and a little cinnamon and leave to stand for 30mins

Cook at 180c for 30-40 mins until top is golden brown

I always use delia's recipe - with little tweaks like using creme fraishe (sp) mixed with the milk instead of cream, or using pannatone instead of bread (very rich!) or cinnamon instead of nutmeg, what ever I happen to have in; has always worked well following her quantities though xx

p.s. I always try to bury the sultanas - because I find the burnt ones you sometimes get at the top are bread and butter pudding  981624 let us know how you get on xx
