can anyone help i need a birthday cake recipe, im just looking for a basic birthday cake with jam and cream in the middle i already have the recipe for my icing and know how im going to decorate it but cant find a recipe for the actual sponge lol i know the basics but im not sure bout measurements my cake is going to be round and my tin is 24cm round tin so bout 9inch and i will be using 2 sponges so need my measurements to fill the 2 tins can anyone help?

Hey chick. The only cakes I make at the moment are Madira cakes as I need them to be firm to support the fondant icing I use. If you need a lighter cake I hope someone has a good tried and tested victoria sponge recipe.

Now when I make a 9inch cake I use a pretty deep tin (makes a 3 inch high cake at least) and I then cut it through the middle and add my filling and sandwich it back together. I used this simple recipe;


8 eggs, weigh them in thier shells
then weigh out the same measures of;

S/R flour (sieved 3 times)
Stork
Caster Sugar
1.5tsp vanilla extract

Whisk together the Stork and sugar til the mixture has increased in quantity and is pale and fluffy, then add an egg at a time continuously whisking, add a little flour with each egg, once all the eggs have been added add the rest of the flour and whisk till the mixture is smooth and creamy looking.
Add the vanilla extract and whisk in.

I bake at 170 degrees for about 40 mins, but I have a fan assisted oven so you might need to adjust it.

for 9 inches I would use the following recipe

350g caster sugar
350g unsalted butter or stork
5 eggs
350g self raising flour
2tsp vanilla extract

grease and line your pans and preheat oven to 175c
beat the butter and sugar together well until pale and creamy,
beat the eggs together in a bowl and gradually add to the mix, letting each bit mix in before adding more so it doesn't curdle,
fold in the flour and add the vanilla extract

It should be a fairly thick consistency, one that drops of the spoon with a good shake.

Bake in the oven until cooked through, to test if it's cooked a put thin metal skewer in the middle, if it comes out clean it's done, or press the top and if it springs back then it's cooked, should take about 45 mins

cool before decorating
