| I'm bored of making plain vanilla cupcakes... does anyone have any good ideas or recipes for other kinds of cupcakes? (its more the icing that I need recipe for I guesS) I dont know what I want but I want something other than vanilla lol. |

| Yumm lemon drizzle. I made some of them the other day. How about chocolate or strawberry? With the icing I think you can pretty much add any juice you want, lemon, lime or orange. How about choc fairy cakes with choc chips in? xxx |

| Lemon Cupcakes - makes 12 muffin case sized cakes; 110g unsalted butter 225g Golden caster sugar 2 large eggs 150g Self raising flour sifted 125g Plain flour sifted 90ml semi-skimmed milk 2 tablespoons freshly squeezed lemon juice Grated zest of one lemon (you need 1 tsp of it)
Cream butter and sugar. Add the eggs one at a time and beat well. In a seperate bowl combine the flours. Add 1/3 of the flours and beat well. Pour in half the milk and beat well. Add another 1/3 of the flours and beat again. Beat in the remainder of the milk and all the lemon juice. Finish by adding the last 1/3 of flour and the lemon zest, beat well - if the mixture looks like it's curdling don't panic just add another spoon of plain flour and beat well.
Bake at 160oC with a fan oven, 180oC without, for about 25 mins (keep checking them, stick them with a cocktail stick and if it comes out clean they're done)
Lemon icing; 110g unsalted butter 2 tablespoons of freshly squeezed lemon juice 2 tsps of lemon zest 500g icing suger
If you want to go REALLY lemony then before you ice your cuppies cut a little hole in the top and pipe in some lemon curd, then ice on top. |

| Chocolate Orange - Makes 12 muffin case cupcakes;
115g good quality dark chocolate 90g unsalted butter at room temp 175g Caster sugar (preferably Golden) Zest and juice of one orange (you need 75ml of juice) 2 large eggs 185g plain flour 1/2 tsp bicarbonate of soda 1/2 tsp baking powder 1/2 tsp salt 1tablesp semi-skimmed milk at room temp.
Preheat oven to 160 oC Melt chocolate Cream the butter, sugar and orange zest Combine the flour, bicarb of soda, baking powder and salt in a seperate bowl Mix the milk and orange juice in a jug (it will curdle, don't worry) Add the chocolate to the creamed mix and beat until just combined, add 1/3 of the flour mix and beat until just combined. Add 1/2 the milk mix and beat again. Repeat these steps until all combined. Spoon into your muffin cases.
For icing; 175g good quality dark chocolate 225g unsalted butter at room temp 1 tablesp semi-skimmed milk at room temp 1tsp good quality vanilla extract 250 icing sugar
Melt the chocolate Beat the butter, milk, vanilla and icing sugar until smooth. If it's too runny keep beating as it'll thicken. |

| How about either lemon or orange and poppyseed cupcakes? They are to die for and go really well with vanilla icing and a few poppyseeds sprinkled on top. Tried some chocolate and orange muffins out of the Annabel Karmel cookbook this week, they were tasty too. |

| I made chocolate with coffee icing (the cake was DELIIIIISH the icing was a bit ... strong) and then white chocolate with white chocolate fudge icing which was quite possible the best cake I've ever eaten! |
