if you like moist almost chewy muffins rather than fluffy ones this is my recipe:
makes about 12 slightly bigger than cupcake muffins, or 8 decent muffins
-250g s/r flour
-75 sugar (any kind, i made vanilla sugar in a jar with some vanilla pods but normal or caster will do)
-75g butter (i usually use spreadable cos it's in the fridge, but again anything will do)
-2 eggs (medium-ish)
-150ml milk (although recently i have put about 120ml milk and 30ml vegetable oil, you can also just use water)
-couple of teaspoons of vanilla essence or lemon essence or whatever else
-1-2 teaspoons of baking powder
-loads of chocolate (maybe 200-300grams?), raisins, lumps of fudge or whatever
mix mix mix and cook on about gas mark 4 (180ish) for 10-20 mins depending on how 'cooked' you like them
the measurements are very vague, you could make them more chocolatey by putting in some cocoa powder too, maybe 2 dessert spoons? they work really well as lemon muffins with a bit of lemony icing on top
