Thought might be good to have a place for recipes as a cpl ladies said they were short on ideas. Maybe if you are following a specific plan include the values for that plan.



Ill kick it off with one i posted on my cookery thread for kel form my extra easy meals in minutes book:



Herbed Mince Beef and Veg Cous Cous



200g couscous
300ml veg stock
Low cal cook spray egfry light
250g extra lean mince beef
1 red pepper deseeded and finely chopped
1 carrot peeled and finely diced
100g green beans cut into 1.5cm lengths
1tsp ground cumin
1 tsp curry powder
salt and pepper
2tbsp each finely chopped fresh mint and coriander
1 finely chopped tomato
4tbsp fat free natural yoghurt to serve



put couscous in wide heat resistant bowl and add stock, cover with cling film and leave 10-12 mins

spray non stick frying pan with frylight and turn heat up high, add mince and veg and stir fry for 8-10 mins til sealed and cooked through

add cumin and curry powder and stir fry for 2 mins.

fluff up cous cous with a fork and add beef, chopped hebs and tomatoes then mix well, serve immediately with spoon ful fat free yoghurt

serves 4 and for those on SW is free on extra easy, 4 syns n green and 9 on original per serving

Serves 4

Put 14oz/397g dried pasta in a large pan of water, add 1 vegetable stock cube and cook for 10 mins. Meanwhile spray a non-stick frying pan with fry light and place over a medium heat. Thinly slice 2 leeks, add to the pan with 9oz/225g frozen peas and cook for 10 minutes. Drain the pasta, reserving 4fl oz/113ml of the cooking stock and then return to the pan. In a bowl mix together the reserved stock and 4oz/113g Kraft Light Philadelphia with Garlic & Herbs. Add the soft cheese mixture, leeks and peas to the pasta, season with salt and freshly ground pepper and mix well. Divide between 4bowls and finish with a twist of black pepper.

Syns per serving : Green 2 1/2

My alterations are as follows!

Add bacon (not sure how it alters the syns etc)

When I drained the pasta I left it in the colander and put cooking stock back into pan with the Philadelphia cause it saves on washing up!

Served it with a sprinkle of Parmesan

You can use the bacon as a HE B on green or it would be free on EE
