We make gingerbread on Christmas eve - a recipe similar to this:

Very simple, and repace the usual currants with mini marshmallows, choc chips when they've cooled (bit of icing to stick)... and icing in festive colours
You can cut your own shapes but the dough obviously spreads alot while baking, so snowmen are OK by hand but cutters help for finer shapes (trees etc.)
We also did flat rectangles a couple of years ago - when pg with bean bump
- and did our own gingerbread house; not so much time on our hands now though!
Be kind - it was our firt try, no template!
I'd post pics of Christmassey gingerbread men, christmas trees etc. but hubby has a tendency to cut / ice rude versions so it'd take a while to find or edit
